Tarmac and Roubaix share Specialized's 44-61cm size range, and the same nominal size will normally fit the same rider - the difference is in stack and reach. At a 56cm the Roubaix runs roughly 35mm taller in stack with a slightly shorter reach, so the bars sit noticeably higher even before accounting for Future Shock travel. If you're between sizes on the Tarmac and want a racier drop, size down; on the Roubaix, size up to lean into the endurance fit. Don't size the Roubaix down to mimic a Tarmac position - the head tube length is the whole point of the platform.
Choose the Tarmac SL8 if you want a pure race bike for climbs, crits and fast group rides on smooth roads. Choose the Roubaix SL8 if you prioritize comfort on rough pavement, mixed surfaces or long endurance days.
